Refrigeration is routinely undersized. Size to peak delivery day, not to an average day, and remember that stock arriving warm needs pull-down capacity, not just holding capacity. As a starting point, allow generous separation between raw and ready-to-eat storage, which usually means more units rather than one large one.

Ambient temperature is the factor most often overlooked. A unit rated for 32 °C ambient in a kitchen that hits 40 °C beside a cook line will run continuously, use far more energy and shorten compressor life. Where a hot line is unavoidable, look for units rated to a higher climate class or plan a remote condensing arrangement.

Food safety and temperature control

Australian food safety guidance expects cold food to be held at 5 °C or below and frozen product kept frozen hard. Any unit you buy should let you monitor and record temperatures easily — a visible digital display is the minimum, and a unit with an alarm is worth the difference on high-value stock.
