The mechanical difference
In a planetary mixer the bowl is fixed and the tool orbits inside it, sweeping the whole bowl. Swap between hook, paddle and whisk and one machine handles dough, batter, cream and meringue. That versatility is why it is the standard first mixer for cafés, restaurants and patisseries.
In a spiral mixer the bowl rotates while a fixed spiral hook works the dough. It develops gluten faster with less friction, which keeps final dough temperature down — a real advantage in an Australian bakery in February. It does one job, and does it better than anything else.
Sizing: dough capacity beats bowl litres
Bowl volume is a marketing number. What you need is the rated dough capacity at your hydration, and confidence that the motor and gearbox can sustain it batch after batch.
A useful rule: choose a mixer whose rated capacity is at least 25% above your normal batch. Running a machine at its limit every day is the fastest way to a gearbox failure, and a labouring mixer heats dough in ways that show up in your crumb.
Dough temperature control
