Stainless Steel Grades Explained: 304 vs 430 in Commercial Kitchens
What the grade numbers actually mean, where each belongs in a commercial kitchen, and why stainless steel still rusts when it is specified or cleaned incorrectly.

What the grade number means
Grade 304 is an austenitic stainless containing roughly 18% chromium and 8% nickel. The nickel content gives it markedly better corrosion resistance against the acids, salts and chlorinated sanitisers used daily in a commercial kitchen. It is the default specification for food-contact surfaces.
Grade 430 is a ferritic stainless with chromium but essentially no nickel. It costs less, is magnetic, and performs perfectly well in dry, low-corrosion environments — panels, trims, dry-store shelving. Put it in a wash bay or under daily chlorine sanitiser and it will show rust staining within months.
Where each grade belongs
Use 304 for prep benches, sinks, splashbacks, wash areas, cool room shelving and anything that touches food or sanitiser. Use 430 where budget matters and exposure is mild: dry storage shelving, equipment cladding, non-contact panels.
Grade 316 adds molybdenum for still greater resistance and is worth specifying in coastal, high-chloride or heavy-brine environments such as seafood processing. For most kitchens it is more than required.
Gauge and why thin tops fail
Grade tells you about corrosion; gauge tells you about durability. Thin stainless drums under a knife, dents under a stockpot and shows every impact. A properly braced or ply-backed top feels solid, stays flat and cleans better because it does not develop low spots that hold water.
When comparing two benches at very different prices, gauge and bracing are usually the difference — not the grade badge on the spec sheet.
Why stainless steel rusts (and how to stop it)
Stainless resists corrosion because of a passive chromium oxide layer. Damage that layer and corrosion begins. The three most common causes in kitchens are steel wool or carbon-steel scourers leaving embedded iron particles, chloride-based cleaners left on the surface, and salt or acidic food sitting overnight.
- Never use steel wool or a wire brush on stainless — use nylon pads or stainless wool
- Rinse and dry after any chlorinated sanitiser
- Clean in the direction of the grain
- Do not leave salt, brine or acidic foods sitting on the surface
- Treat rust spots early — they spread from a single contamination point

- Yes, 430 is food safe. The issue is durability rather than safety: in wet, sanitised, high-chloride environments it corrodes far sooner than 304, so it is the wrong economy for prep and wash areas.
- How can I tell 304 from 430 stainless steel?
- 430 is magnetic and 304 generally is not, so a magnet gives a quick indication — though cold working can make 304 slightly magnetic. For certainty, ask the supplier for the material specification.
- What causes rust spots on a new stainless bench?
- Almost always surface contamination: steel wool, a carbon-steel scourer, or chloride cleaner left to dry. Clean the affected area with a stainless-safe product, rinse thoroughly and dry, and remove the offending cleaning tool from your kitchen.
