Grade, gauge and why they matter

Grade 304 stainless steel is the standard for food-contact surfaces in Australian commercial kitchens — it resists the acids, salts and sanitisers used every day. Grade 430 costs less and is acceptable for dry areas and non-contact panels, but it corrodes faster in wet, chlorinated environments.

Gauge determines how a bench feels and how long it stays flat. A thin top drums under a knife and dents under a stockpot. Look for a properly braced top with a hat-channel or ply-backed underside if you are chopping, portioning or landing heavy pans on it all day.

Planning your bench layout

Work in zones: delivery and unpack, wash, prep, cook, plate. Each zone wants an uninterrupted bench run long enough for the largest container or tray you handle, plus landing space either side of equipment. A 300 mm landing space on each side of a benchtop appliance is a practical minimum.

Allow 900 mm of clear aisle for a single operator and 1200 mm where two staff pass or where a trolley moves through. Splashbacks are worth specifying against any wall run — they eliminate the grout line that fails a hygiene audit first.

What to look for when buying

  • Specify grade 304 stainless for anything with food contact.
  • Check the top is braced — unsupported thin tops dent and drum.
  • Add a splashback on every wall run to simplify cleaning.
  • Undershelves double storage but reduce floor-cleaning access; adjustable feet help.
  • Measure doorways and lift access before ordering long single-piece benches.

What is the standard height for a commercial kitchen bench?
900 mm is the Australian standard working height, with 600 mm, 700 mm and 750 mm the most common depths. Taller staff or heavy dough work sometimes justify 950 mm — tell us your preference and we can fabricate to suit.
Do you make custom-sized stainless benches?
Yes. We fabricate benches, sinks and shelving to measure at our Yennora workshop. Send us your dimensions or a rough sketch through our custom fabrication page and we will quote it.
Is 430 stainless steel good enough for a kitchen bench?
For dry storage areas and non-food-contact panels, yes. For prep surfaces, wash areas and anywhere sanitiser is used daily, 304 is the correct specification and will outlast 430 by years.
