A rack is only useful if the runner pitch suits your trays and your oven. Before ordering, note the tray size you standardise on, the number of tray slots you need per rack, and whether the rack must roll directly into a rack oven or only serve as cooling and transport.

Runner pitch is a production decision as much as a fit decision: tighter pitch fits more trays per rack but restricts airflow between products, which slows cooling and can trap steam. For proving and cooling, more generous spacing usually pays for itself in product quality.

Castors are the part that fails first

The single most common trolley complaint is castors, not frames. Specify larger-diameter castors for uneven floors, drain grates and door thresholds; they roll over obstacles that jam small wheels and they need far less push force when loaded. Two braked castors on the operator's end are the practical minimum for safety on any sloped surface.

Where trolleys are washed down, sealed or stainless-bodied castors last dramatically longer than plated ones. Keeping a small stock of spare castors on hand avoids taking a whole trolley out of service.

  • Confirm tray size and runner pitch before ordering any rack.
  • Larger castors roll over drains and thresholds; specify two with brakes.
  • Stainless or sealed castors survive wash-down areas far longer.
  • Nesting or knock-down trolleys save space in tight back-of-house areas.
  • Keep spare castors on hand so a wheel failure does not sideline a trolley.

Common configurations hold 15 to 20 trays, depending on runner pitch and tray size. Tighter pitch increases capacity but reduces airflow between products, which affects cooling and crust development.
Can trolleys go into a dishwasher or wash bay?
Stainless racks and trolleys are designed for wash-down. Check that castors are sealed or stainless — standard plated castors corrode quickly under repeated washing.
What weight can a commercial trolley carry?
